The Hop And Brew School Podcast is back, and this time with some good ol' fashioned science! Join us as Yakima Chief Hops Technical Manager, Pat Jensen, as well as Technical Brewer at Yakima Chief Hops, Tommy Yankon, walk us through the basic chemistry behind hops and hop compounds. Learn about how different compounds isomerize in your wort and beer, as well as how different concentrations of those compounds can affect your finished product. The team walks us through the basic chemistry underlying hop use and gives us a foundation of the science behind hop use in beer.
Good, Bad And Ugly
In this episode of the Hop And Brew School Podcast, Nick Zeigler and homebrew superstar, Nathan Smith, walk us through off flavors in beer that can be derived from hops and their use. The three main categories of such flavors can be described as undesirable flavors (such as sulfurous, vegetal or cheesy), excessive presence of flavors (such as grassy, lingering bitterness, or astringency), and a lack of character of flavors (such as bitterness and aroma).
