Ep170: Sports To Watch & Food To Eat

THIS WEEK'S GUESTS: Ron Brandani - Owner of Brandani's Restaurant & Wine Bar Fred Olson -Formerly Mac Hudson of "The Hudson & Harrigan Show" Well, let’s just go ahead and acknowledge the 900-pound gorilla in the room: the Astros! To say the ALDS has been a roller coaster ride would be an understatement of “Space Mountain” proportions! So, there’s still plenty of baseball left to watch, and football (both pro and college) and Opening Day for the NBA, so that brings us around nicely to the subject matter for this edition of The Outdoor Cooking Show. Today, we’re going to talk about what to serve during sports watching parties in our homes.

Ep168: Shopping For Meat – Plan Ahead

THIS WEEK'S GUESTS: Jerrod Poffenberger - Co-Owner of The Bellville Meat Market Fred Olson -Formerly Mac Hudson of "The Hudson & Harrigan Show" Well, it’s officially fall! The first day of Autumn was Monday, and you know what that means in Texas, don’t you? Nothing – that means absolutely nothing! It’s still 90 degrees. If you listened last week then you know we discussed shopping for seafood on that program, so I thought we’d continue in that vein by talking about shopping for beef, pork and chicken, today.

Ep167: Smarter Seafood Shopping

THIS WEEK'S GUESTS: Kaleb Allison - Owner of Kaleb's Krawfish and Seafood Fred Olson -Formerly Mac Hudson of "The Hudson & Harrigan Show" Well, what’s new pussycat? Oh, my fellow geezers will instantly recognize that reference – Tom Jones 1964? I should look that up, so “What’s New Pussycat” – song – Tom Jones…and – 1965! Well, I was close. Certainly, somebody smarter than me remembers all this stuff, but you don’t have to look very hard to find somebody smarter than me! At the same time, you don’t have to look far to find someone dumber than me, either. So, we here on The Outdoor Cooking Show have accepted the challenge to make sure the general public is a little smarter – better educated in the practice of purchasing food items that are safe for everybody’s consumption.

Ep166: What You Need To Know About Pellet Grills

THIS WEEK'S GUESTS: Greg Berlocher - Executive Producer and Backyard Chef Fred Olson -Formerly Mac Hudson of "The Hudson & Harrigan Show" It’s been a painful sports week in the Hames Household, and I’m not at all sure I’m completely over it just yet, to be perfectly honest. Obviously, I’m a big Houston Texans’ fan, and that Monday night game in New Orleans has been a very difficult pill for me to swallow. So, some serious comfort food is in order at our house, and I can’t think of anything more comforting than something like brisket, or ribs, or pork butt with BBQ sauce slathered all over it, can you? So, we could get in the car and drive to one of our favorite hole-in-the-wall BBQ joints, or we could break out the old standby smoker and cook it ourselves. Or we could save ourselves a lot of time and a long, sleepless night by using a pellet grill, instead.

Ep165: Tailgating By The Book

THIS WEEK'S GUESTS: Marshall Harris - Former TCU football star and author Fred Olson -Formerly Mac Hudson of "The Hudson & Harrigan Show" Finally! It’s finally fully football! And yes, I know the college season kicked off last weekend, but that’s the reason why I said “It’s finally fully football,” because the NFL starts this weekend, and that means everybody is finally playing football – pro, college, high school, middle school, pee wee – it’s finally fully football, and that makes my heart sing! And let's face it, football in Texas just isn’t complete without tailgating, so we’re going to talk to a guy who has gone to the trouble to write an entire book on the subject.

Ep164: Last Call For Catfish

THIS WEEK'S GUESTS: Dave Fremont - Boyd's One Stop Jerrod Poffenberger - Owner of Bellville Meat Market Fred Olson -Formerly Mac Hudson of "The Hudson & Harrigan Show" Happy weekend, everybody! Hard to believe, this is the last weekend of August, and that means the end of an important commemorative food month – National Catfish Month, so that’s the centerpiece of today’s discussion – catfish. And of course, there are two functions that must be completed before the consumption of the catfish – catching the catfish, and cooking the catfish.

Ep163: Cool Food For Hot Weather

THIS WEEK'S GUESTS: Greg Berlocher - Executive Producer of The Outdoor Cooking Show Fred Olson -Formerly Mac Hudson of "The Hudson & Harrigan Show" I saw a really funny post online the other day. It said, “Dear Texas Weather – stop showing off! We get it – you’re hot.” So, in keeping with that thought, I do have a plan for today’s show, and it was born out of a passing comment I made on last week’s show. You may remember I said something like, “This probably would be a good time to do a show about cool drinks or cool foods,” so that’s exactly what we’re going to discuss today – “Cool Food For Hot Weather.”

Ep162: Around The Kitchen & Around The World

THIS WEEK'S GUESTS: Michelle Morris - Owner of Well Done Cooking Classes Fred Olson -Formerly Mac Hudson of "The Hudson & Harrigan Show" America may not be able to agree on politics, and we may not be able to agree on religion, or even sports, but I’ve found one thing we can definitely all agree on: it’s hot! In point of fact, this probably would be a good time to do a show about cool drinks or cool foods, but we all know there’s plenty of hot Texas weather left before this summer is over and done with.

Ep161: Cooking Good For The Neighborhood

THIS WEEK'S GUESTS: Rick Alspaugh - Owner of Alspaugh's Ace Hardware in Kingwood Fred Olson -Formerly Mac Hudson of "The Hudson & Harrigan Show" What a great time to be a Houstonian, huh? Well, maybe it’s not the greatest time of year (given the weather), but c’mon – we expect it to hot in August, don’t we? The subject for today’s edition of The Outdoor Cooking Show is “Cooking Good For The Neighborhood.” But when I say “neighbor” and “neighborhood” I don’t just mean the people who live right next door, or even on the same block or street as you do.
